Now that the festivities are over with, I feel a bit flat. If you do too, I have the best way possible to cheer you up... make my Reese's Peanut Butter Taste-alike Traybake. Honestly, a square of that with a cuppa and you'll capture a little moment of heaven. If you know someone that loves their American Sweeties, show them this.
For the yummy peanuty centre (this should be enough to make two trays worth):
- 400g icing sugar
- 400g smooth peanut butter
- 100g unsalted butter
- 100g fine brown sugar
For the sweet chocolatey top:
- 400g of milk chocolate ( I prefer Galaxy, but it's up to you)
- One tablespoon of butter
I never did say they were good for you! You will forget all about calories when a slice of this melts on your tongue.
It's so easy to make. throw all of your peanut butter filling ingredients in a bowl and mix together. You will eventually have it into a smooth paste. Shove a spoonful of that in your mouth... oh baby!
Line two baking trays with greaseproof paper and pat down your peanuty mix on top of those lined trays. I like to then stick mine into the fridge for 15 minutes, because it tends to make it easier when adding the chocolate.
Melt your chocolate using the glass bowl over the pan of water technique or if you are daring in the microwave. Mine always ends up a burnt mess when I use the microwave. Don't forget to melt your butter into this too. Once melted, spread evenly across your peanut mix that's in the trays.
As much as you will feel like submerging your face in these like some rabid Cookie Monster frenzy, don't. they must be put straight into the fridge to cool down and set. Once semi-set score them into sections so it's easy to cut into squares. This recipe can be halved to make one tray, but seriously once you taste these, you'll wish you had made two.
Due to the peanut butter, it's not suitable for those with nut allergies. In fact it's not suitable for anyone that isn't you - yes, it's that good!
