Cauliflower Cheese
Ingredients:
- 1 large Cauliflower (cut into small chunks)
- 1 tablespoon Salted Butter
- 1 teaspoon Olive Oil
- 1 teaspoon English Mustard
- 1/2 Brown Onion (finely diced)
- 1 Garlic Clove (minced)
- 350ml Milk
- 340g Mature Cheddar (grated)
- 340g Mozzarella or Italian Blend (grated)
- 85g Parmesan cheese (grated or powder)
- 85g Blue Cheese (broken into chunks)
- Black Pepper (to taste)
- Salt (to taste)
Method:
- Put all your ingredients into slow cooker and stir well.
- Cook for around 4 hours on Low setting.
- If the sauce is too runny, cook on Low for another hour.
Lemon Garlic Chicken
Ingredients:
- 500g Skinless Chicken Breasts
- 1 tablespoon of Vegetable Oil
- 2 tablespoons of Water
- 100ml of Chicken Stock
- 150ml fresh lemon juice
- 1 Clove of Garlic (minced)
- 2 teaspoons Dried Mixed Herbs
- Salt (to taste)
Method:
- Rub chicken breasts in the Oil and Herbs, then brown in a frying pan.
- Put into Slow Cooker and add the rest of the ingredients.
- Cook on Low for 4-5 hours.
Creamy Italian Chicken
Ingredients:
- 4 Skinless Chicken Breasts
- 1 tablespoon Dried Italian Herbs
- Tub of Cream Cheese/Philidelphia
- 1 tablespoon Lemon Juice
- 1 tablespoon of French Mustard
Method:
- Put the Chicken, Herbs, Lemon Juice and half a cup of water into Slow Cooker.
- Cook on Low for 4 hours.
- Add the Cream Cheese and the Mustard
- Cook for a further 30 mins on Low.
Meat Stuffed Peppers
Ingredients:
- 500g Lean Lamb Mince
- 5 Peppers (Any colour)
- Half a Cauliflower (Grated)
- 3 Tablespoons Tomato Paste.
- 1 Brown Onion (Diced finely)
- 2 Cloves of Garlic (Minced)
- 1 teaspoon Cinnamon
- 2 teaspoons of Mixed Dried Herbs
Method:
- Prepare your Peppers, by cutting off the tops and hollowing out.
- Mix the Cauliflower, Garlic, Onion, Cinnamon, Herbs and Mince together.
- Brown the Mince in a Frying Pan. (This is optional)
- Mix your Tomato Puree into your Mince Mix and stuff into each Pepper.
- Spray the Slow Cooker with Cooking Spray and put the Peppers in.
- Cook on Low for around 6 hours.
Chicken Coconut Curry
Ingredients:
- 500g Skinless Chicken Breast
- 1 Brown Onion (Finely diced)
- 2tablespoons Curry Paste (Pick one to your taste)
- 1 Large Cauliflower Head
- 400ml Coconut Cream
- 400g Spinach (Finely Chopped)
Method:
- Put all the ingredients, apart from the spinach, in the Slow Cooker and mix well.
- Cook on Low for 6-10 hours.
- Five minutes before serving, add the Spinach.
- You may need to do this in two batches.
